Regular homemade Vegetbale(Sabjis)


 Lady finger ( bhendi ) ki sabji

Ingredients :- 

½ kg Bhendi ( lady finger),  8/9 green chilies ( chopped),  5/6 garlic cloves,  2 tablespoon oil,  ½ lemon,  salt as required,  ½ teaspoon turmeric,  1 teaspoon cumin seeds,  coriander leaves ( chopped).

Process of making  simple lady finger ( bhendi ) ki sabji :

 1-  First , Wash the lady finger  with water nicely and cut the lady finger ( bhendi )into pieces.
2- After cutting lady finger ( bhendi )  squeeze lemon on it. So, that the lady finger does not get sticky.
3- After this, heat the oil in a pan ( kadhai) and add cumin seeds and garlic and green chilies, salt and turmeric and mix  it  very well.
4-  After mixing it nicely , Then add chopped lady finger and mix it well again .
5-  After  this Sprinkle some water, ( do not add more water in lady finger ( bhendi )  just sprinkle some water or else lady finger (bhendi ) will get sticky).
6-  After sprinkling some water  then keep the plate on a pan ( cover the pan with lid )  and let lady finger  ( bhendi ) cooked on the low flame and after some time add some chopped coriander leaves.
7- After 5 minutes mix it again and check  whether the lady finger ( bhendi ) is cooked or not. If it is cooked turn off the gas and serve the lady finger ( bhendi ) with roti or chapatti.

 Kadai Paneer


For kadai masala:-

 1 tablespoon cumin seeds,  2 teaspoon coriander seeds,  ½ teaspoon black pepper,  3 dried kashmiri red chili.
For onion tomato paste;-  2 teaspoon oil,  3 clove garlic,  1 inch ginger,   1 onion sliced, 2 tomato ( chopped).

For kadai paneer:-

1 tablespoon,  1 bay leaf/tej patta,  2 green chillies,  1 teaspoon fenugreek seeds ( methi seed),  ½ onion, ½ capsicum ( chopped in cube shape),  ¼ turmeric,   ½ teaspoon kashmiri red chilli powder,  1 cup water, 13 cube paneer,  2 tablespoon cream,   ¼  teaspoon garam masala,  coriander leaves ( chopped).

Process for making kadai paneer: -

1 – First take a big kadai, heat  1 tablespoon of oil and then  add bay leaf, green chili, fenugreek seeds and mix it well.
2- After that add turmeric powder and cubed capsicum .
3- After this add tomato and onion paste and  salt as required mix it well.
4- Cook till the masala starts releasing oil.
5-  Once the masala starts releasing oil  add water as required , and then add paneer cubes, cream and mix it  very well.
6- After mixing it nicely cover it with lid  for at least  5 minutes.
7- After this add garam masala, coriander leaves and mix it well again.
8- Finally your kadai paneer is ready to serve with roti , naan , chapatti  as you like .

Simple aloo ki sabji


5 potatoes ( chopped in medium size),  1 tablespoon oil,   3 onion ( chopped),  4-5 green chilies ( chopped),  1 teaspoon red chili powder,  ½ teaspoon turmeric powder,  1 teaspoon ginger and garlic paste,  1 tablespoon coriander leaves,  1 tablespoon fenugreek seeds ( methi seeds) ,  salt as required.

Process for Making simple aloo ki sabji  :-

1 -  Firstly  take a cooking vessel and add oil into it , once the oil gets heat add onion,  green chili and mix it nicely  for some time , once the onion  get soft , add salt, red chili powder, ginger and garlic paste and mix it well again.
2- After this add potatoes ( cut into pieces as you like )  and cook it for 3 /4 minutes. After this add water, coriander leaves and fenugreek leaves and mix it again well, and cooked it for some time.
3- After some time Check whether the aloo is cooked or not.
4-  If  the aloo is cooked and still there is some water left , cook for some minute again by keeping lid .
5-  Once there is no water left then  the aloo sabji is ready to served with roti or chapatti .
