Gajar ka halwa


Ingredients:-
1kg carrot,  ¼ cup ghee,  12/13 cashew nuts, 12/13 almonds,  3 cup milk,  ¾ cup sugar,  ½ cup mawa,   ¼ teaspoon cardamom powder.


Process:-
1 – First wash the carrots with clean water then peel the skin of all the carrot and then grate them finely.
2 – Then take a large kadhai and heat the kadhai then add ghee into it and then add cashew nuts ( chopped) and almonds ( chopped) and fry them till it turns golden brown.
3 -  After frying remove it and keep it aside.
4 – After this add grate carrot in the same kadhai again and mix it well till carrots colour changes slightly.
5 – After this milk into it and mix it well and keep it for boiling. Stir it occasionally.
6 – Boil it till the milk gets reduce and the carrots are cooked well.
7 – After this once the milk starts getting thick then add sugar into it.
8 – After adding the sugar mix it well till the sugar gets dissolves completely and cook halwa till it gets thick.
9 – Once the halwa gets thick then add cardamom powder, fried cashew and almonds and then add mawa into it and mix it again well and keep in on a low flame now.
10 – Finally delicious gajar ka halwa is ready to serve. Serve gajar ka halwa chilled or warm as you like and you can also garnish it with some chopped dry fruits while serving.

6 – Now boil it till the sugar get dissolved and the kheer gets creamy.
7 – Once the sugar gets dissolved completely and the kheer gets creamy now add nuts and cardamom powder and mix it again well.
8 – Finally your rice kheer is ready. You can serve it hot or chilled as you like.

Basundi


Ingredients:-  
2 litre milk, 10/12 cashew nuts, ½ cup sugar, 10/12 almonds, ¼ teaspoon kesar, ¼ teaspoon cardamom powder.


Process:-
1 – First take a kadhai and then add milk into it and keep it for boiling.
2 – Once the milk gets boiled then add cashew nuts ( chopped) and almonds ( chopped) and stir it well ( make sure milk doesn’t to the bottom.
3 – After boiling it till the milk  gets reduce. Stir it in-between while boiling so that the milk does not get stick).
4 – After this add sugar and kesar ( saffron) and cardamom powder and mix it well again and boil it for at least 5 to 10 minutes till the milk gets thick completely.
5 – Finally delicious Basundi is ready to serve. Serve it hot or chilled and garnish it with dry fruits.

Rabdi


Ingredients:-  1 litre milk, ¼ cup sugar, ½ teaspoon cardamom powder, 2 tablespoon kesar milk, 6/7 almonds, 7/8 cashew nuts.


Process:-

1 – First take a pan or kadhai and add milk into it and keep it for boiling. Stir it occasionally while boiling
2 – Once the layer is formed then low the flame and keep it for boiling.
3 –  The cream layer will formed while boiling then remove it stir it. Repeat the same step of cream. Boil it till the milk gets reduce.
4 – Then add sugar, cardamom powder and saffron milk ( kesar milk) into milk and stir it well and keep it for boiling again if the cream layer is formed then remove the layer and stir it.
5 – After this turn off the gas flame and remove rabdi in a bowl and keep it aside on a room temperature.
6 – Finally the delicious rabdi is ready to serve. Serve it hot or chilled as you like and while serving garnish it with some chopped dry fruits.
[Note:- You can also use this rabdi to prepare rasmalai]
