Rice kheer


Ingredients:-  ¼ cup rice, 6 cup milk, ½ cup sugar, 1 teaspoon ghee, 10 to 12 cashew nuts, 2 tablespoon kishmish,  ¼ teaspoon cardamom powder.


Process:-

1 -  First take a large kadhai and add 5 cup milk into it and keep milk for boiling.
2 – Now add soaked rice in the milk kadhai and mix it well and cook it for 15 minutes or  until the rice grains get cooked.
3 – while mixing mash the rice until the kheer gets creamy.
4 – Once the kheer gets creamy add 1 cup milk into it to adjust the consistency  of milk and mix it well.
5 – And  now add sugar and mix it again.
6 – Now boil it till the sugar get dissolved and the kheer gets creamy.
7 – Once the sugar gets dissolved completely and the kheer gets creamy now add nuts and cardamom powder and mix it again well.
8 – Finally your rice kheer is ready. You can serve it hot or chilled as you like.

Sheera /  Sooji ka halwa


Ingredients:-
 ½  cup ghee, ½ cup rava / sooji, 2 tablespoon kishmish, ½ cup milk, ½ cup water, 10/12 cashew nuts, 1 cup sugar, 1 banana ( chopped), ¼ teaspoon cardamom powder.


Process:-
1 – First take a large kadhai and add ghee into it and then add kishmish, cashew nuts into it and roast it till turns golden brown.
2 – Once it turn golden brown remove it from kadhai and keep it aside.
3 – Now in the same kadhai add rava and roast it for 5 minutes.
4 – Once the rava get roasted then add milk and water into it and mix it well. Make sure no lumps are formed.
5 – Now cover it with lid for 5 minute or till the rava gets cooked completely.
6 – Once the rava gets cooked then add sugar and chopped banana into it and mix it well again till the sugar get dissolved completely.
7 – Now add dry fruits, cardamom powder and ghee into it and mix it again.
8 – Now cover it with lid and cook it for 5 minutes.
9 – Finally your sheera / sooji ka halwa is ready to serve.( Sheera is also cooked on a satyanaraya pooja as Prasad).

Sheer khurma


Ingredients:-  2 tablespoon ghee, 50 grams seviyan, 2 tablespoon almonds ( badam), 2 tablespoon cashew nuts, 2 tablespoon kishmish ( raisins), ¼ cup dates, 5 cup milk, ¼ cup sugar, ¼ teaspoon cardamom powder, 1 teaspoon kewra water.


Process:-

1 – First take a kadhai and add ghee into it and then add seviyan into it and roast seviyan on a low flame. Roast it until the seviyan turns golden brown.
2 – Once the seviyan turns golden brown keep it aside.
3 – Now take a another kadhai and add 1 tablespoon ghee and then add almonds ( badam), kishmish,  dates and roast it on a low flame and remove it and  keep it aside.
4 – Now take aadd milk in kadhai and boil the milk. Stir the milk continuously to prevent  from burning.
5 – Then add roasted nuts and milk it well and keep it on a low flame till the milk gets slightly thick.
6 – Once the milk gets slightly thick then add sugar and seviyan and mix it well.
7 – Now boil it for 10 minutes or till the seviyan cooks completely.
8 – Once the seviyan cooks completely then add cardamom powder and kewra water into it and mix it well.
9 – Finally your sheer khurma is ready to serve. Serve it hot or chilled as you like.
