GULAB JAMUN


Ingredients -  100gm milk powder,  60gm flour ( maida),  1/2 teaspoon baking powder,  2 tablespoon ghee,  milk ,  oil.
For making sugar syrup -  2 cup sugar ,  2 cup water,  2/3 cardamom, kesar ( saffron) ,  1 teaspoon lemon juice,  1 teaspoon rose water.


Process -

1 - First take a big bowl then add milk powder, flour ( maida) and baking powder into the bowl.
2 - After this, mix all this ingredients well.
3 - After mixing it nicely then add ghee and mix it again so that the mixture get moist.
4 - After this add milk into it and start mixing it ( don't add to much milk).
5 - After this combine all the mixture and make a soft dough.
6 - After this cover the dough and keep it for at least 10 to 15 minutes.
7 - Till the dough is resting, make sugar syrup.
8 - For making sugar syrup take a bowl or utensil and add sugar , saffron ( kesar), cardamom and water into it and mix it nicely and keep it for boiling till the sugar syrup gets sticky.
9 - Once it gets sticky turn off the gas and add lemon juice and rose water into it.
10 - And then sugar syrup is ready keep it aside.
11 - After this take the dough and start making small balls of the dough if gulab jamun size.(Make sure there is no crack in the ball or else gulab jamun will break while frying).
12 - After this heat the oil in a kadhai and start frying small ball of gulab jamun in the oil. ( You can also fry gulab jamun in ghee it will make a good flavour).
13 - While frying gulab jamun  fry it on a low flame and stir it continuously while frying. Fry it till the gulab jamun get golden and brown.
14 - After this add fried gulab jamun into the sugar syrup.
15 - After adding gulab jamun into sugar syrup keep it aside for at least 2 to 3 hours so that the gulab jamun will absorb sugar syrup.
16 - After this serve the gulab jamun and enjoy the tasty gulab jamun with ice cream or as it is.

 

 

 

 

Kaju Katli


Ingredients:- 
  2 Cup of cashew ( kaju),  1 cup sugar,  ½ cup water,  1 teaspoon ghee,  ¼ teaspoon cardamom powder.


Process:-              
1 – First take a mixture jar and add cashew into in grind it in a fine powder.
2 – After grinding, sieve the cashew powder and make sure no lumps are formed.
3 – After this take a large kadhai or bowl and add sugar and water into it and stir it continuously till the sugar gets dissolve .
4 -  Once the sugar gets dissolve boil it for 5 minutes and then add powder of cashew into it and mix it well  till the mixture get combine and formed a smooth paste. (make sure no lumps are formed).
5 – After this add ghee and cardamom powder and mix it again and cook it till the mixture gets into a smooth paste and do not over cook.
6 -  Then grease the butter paper with ghee and add the mixture on a butter paper.
7 – After this fold it using spatula until the mixture gets thick and a dough formed.
8 – Once dough is formed knead it slowly and make a soft dough.
9 – After place the cashew dough  between the butter paper and roll it using the rolling pin and roll it slightly thick.
10 – After this grease it with the ghee and the now apply silver vark on it. Applying silver vark is optional.
11 – After this cut it into a  diamond shape.
12 -  Finally enjoy the tasty  kaju katli.
