Khandvi

Ingredients :


1 cup besan  (gram flour ), 1 inch ginger, salt as per taste, 1/2 teaspoon  turmeric powder ( haldi ) , 1 pinch  hing (asafoetida), 3 cup taak  ( buttermilk), 3 green chilli, 3 tablespoon  oil, 1 tablespoon lemon juice, 1 teaspoon mustard seeds ( mohri )


For Garnishing

         2 teaspoon  coconut ( grated ) ,  1/2 gm coriander


Process:-

    • Firstly Take a big mixing bowl and sieve besan ( gram flour). and make a ginger and green chilli paste.
    • And  then mix the besan( gram flour) with  ginger and garlic paste , salt as required, lemon juice , butter milk , turmeric powder  and mix it  very well and  make sure no lumps should be formed. ( so mix it very nicely it might take some time).
    • And then  grease the back side of the stainless steel  flat plate with oil \, so that khandvi mixture will not stick on it and it will be easy to roll it if the oil is greased nicely.
    • After this stir this mixture continuously till it become thick , it might take some time and once the mixture gets thick , then quickly add the mixture on the back side of  the stainless steel plate greased with oil  and make sure thin layer should be formed once the mixture is added on a stainless steel plate.
    • Once the mixture cools down  cut it into two inches wide ( straight) and then roll it tightly and slowly and  make sure you don’t break them while rolling . ( as the mixture is soft make sure you roll it very slowly and carefully).
    • And then heat 2 tablespoon of oil and then add pinch of hing (asafoetida) and coriander leaves and when they splutter pour it on the pieces of khandvi and the khandvi is ready to serve.

Mixed dal handvo


Ingredients :-
¼ cup toohar dal , 1 tablespoon urad dal , 1 tablespoon chana dal , 1 tablespoon green moong dal , ½ cup rice, 1 tablespoon whole wheat, ¼ cup dahi , ¾ cup dhoodhi ( bottle gourd), 3 teaspoon oil, 2 teaspoon lemon juice , Pinch of baking soda , 1 teaspoon sugar , ¼ teaspoon chilli powder, ¼ teaspoon turmeric powder, 1 teaspoon ginger , green chilli paste, ½ teaspoon mustard seeds, ½ seasame seeds, Pinch of asafoetida ( hing)


Process:-


1 – Firstly, To make a mixed dal handavo, first wash all the dals, rice and whole wheat and soak it all for at least 4/5 hours in an enough water .
2 – After soaking the dals, rice and wheat overnight, blend all the rice , dals and whole wheat in a mixture, and make a smooth paste using water .
3 – After grinding take all mixture in a mixing bowl and add dahi and cover the bowl and keep it  for fermenting overnight.
4 -  After this add lemon juice, bottle gourd, turmeric powder, salt as required, ginger and chilli paste, chilli powder and make sure you mix it well .
5 – After that heat the pan and add oil , mustard seed , seasame seeds and asafoetida(hing) and sauté it for a minute.
6 – After this pour half of the batter  to make a thick layer.
7 – Cover a lit and cook it for atleast 5/6 minutes , till it turns golden brown .
8 –Turn it over with a flat spoon , and lit it cook for again 5/6 minutes till it turns golden brown.
9 – After that remove the handvo and let it cool down for some time and then cut the handvo into square  shape pieces .
10 – After cutting handvo into square shape then Repeat all the steps as shown again  till the batter gets finish .
11 – And the mixed dal handvo is ready , served it with green chutney or sauce as you like .
