Thalipeeth

Ingredients :-

1 cup jowar flour ,¼ cup gram  flour ( besan), ¼ cup wheat flour ( aata), ¼ cup bajra ,¼ cup rice flour,
1 tsp  ginger garlic paste, 2 green chilli ( chopped in small pieces ), ¼ tsp turmeric powder, ½ tsp coriander powder, ½ tsp cumin (jeera) powder, ¼ tsp ajwain (carom) seeds, 2 tsp  sesame seeds,
2 tbsp coriander ,1  chpped onion , salt as per taste , 1 cup water (to knead), oil for roasting thalipeeth

Process of making thalipeeth :-

1 - first, in a big bowl take 1 cup jowar flour, ¼ cup besan, ¼ cup wheat flour, ¼ cup bajra and ¼ cup rice flour and mix it well.
2 - and then add 1 tsp ginger and garlic paste, 2 green chilli, ¼ tsp turmeric, ½ tsp coriander powder, ½ tsp cumin powder, ¼ tsp ajwain, 2 tsp sesame seeds, 2 tbsp coriander, 1 onion and ½ tsp salt.
mix well.
3 - and then add ½-1 cup water as required and knead and make a dough very nicely.
4 – after kneading nicely take a small ball of dough and start patting on a oiled butter paper in a round shape.
5 -  Once done patting slowly drop the sheet upside and down over the hot griddle or pan.
6 – And then peel off the butter paper sheet slowly without breaking your thalippeth.
 put some oil over the thalipeeth and keep it for cooking.
7- And then cover the thalipeeth with lid  and cook from both side of the thalipeeth on a medium flame.
8 - and then serve the hot thalipeeth with butter, pickle and curd or one can also eat it with green chutney and sauce.

Khaman dhokla


           Ingredients for khaman dhokla ;-
              1 cup gram flour  , 1 teaspoon sugar , salt as required , 1 tsp refined oil , 1 teaspoon mustard seeds , ¾ cup of water , 1tsp lemon juice , ¾ tsp baking soda , 15/16 curry leaves .


         For garnishing dhokla :-  
            4 sliced cut green chillies , 1 teaspoon coconut ,  some curry leaves .


          Process of making khaman dhokla :-


                 1 – Firstly, this is easy recipe of  Khaman Dhokla , take a big  bowl and  then add gram flour ( besan), salt as required , water, lemon juice and baking soda into a mixing bowl and then  mix all this ingredients very  well. And then  keep this batter  aside for fermenting for at least 1-2 hours and  if you are making making khaman dhokla  in the winter season, it  might take some extra time for fermentation. and then, add then  boiled water into a steamer and then  grease the utensil in which you want to make dhokla  with oil ( grease it nicely with oil or else the batter will get sticked).
            2 -  And then add the  dhokla batter in the greased oil utensil and cook khaman dhokla on the  low flame in a steamer for at least  15-20 minutes. And then after 15/20 minutes check  the dhokla with a knife or stick,  by inserting the knife or stick inside dhokla  . and if the knife or stick comes out clean (no dhokla batter is stick to it),  then remove the dhokla  from the stove or gas . Allow the dhokla  to cool down for sometime and then remove it from the utensil and  cut it into a squares shape .
         3 – After cutting dhokla into a square shape now we have to garnish dhokla so for garnishing khaman dhokla take some oil in the pan or kadhai  and then heat the oil and then  add curry leaves, grated coconut and green chillies (straightly  chopped) and then  put this all on the  pieces of dhokla and your dhokla is ready to serve . You can have it with green chutney or green fried chillies as you like.
