Puran poli  :-


Ingredients: `
             1  cup chana dal = 250 gm wash and soak in water for atleast 2 hours .1cup = 250 gm grated jiggery , 150 gm all purpose flour , 100 gm wheat flour ,  ½ teaspoon turmeric powder , salt as per taste ,  3-4 green cardamoms , 1 small piece of nutmeg , ½ teaspoon ginger powder , ½ teaspoon dill , little saffron thread , oil , ghee , rice flour .


Process of making Puran poli:

  • Firstly, boil 5 cup of water in a bowl or utensil to cook chana dal. Take one cup of chana dal and add 5 times of  water in it . when the water boils , add the soaked chana dal and cooked on medium flame.
  • Soak the flour for the hive . Add all purpose flour ( maida), wheat flour , salt and turmeric powder and mix well .knead well. Add little water if required and knead dough well . Make sure Flour should not be too soft or thick . Once the flour becomes soft , rub the flour  with oil and after rubbing oil cover the dough and keep it for atleast 1 hour.
  •  cook the lentil on low heat for half an hour. After this try  to press the dal seeds by hand. Drain all the water from dal and keep aside the remaining water for the "cut". The cut is  known as Amti also, also known as Yelvanachi Amti.
  • To cook the puran, add 1 tbsp ghee in a pan or kadhai, add cooked chana dal (while the chana dal hot) and add grated jaggery.  And let the jaggery dissolve completely over medium to low heat.
  • Grind cardamom, dill and nutmeg in a mixer till it is cooked.
  • After this when the puran is cooked in 15 minutes, the jaggery juice comes out. To check  if the puran is cooked, put a spoon in the middle of the pan. Do not cook this puran ( otherwise if the puran gets dry it will not be able to fill in the batter. Add powder, saffron and ginger powder and mix it well. Remove from the heat and keep it to cool.
  • once the filling gets cool, grind it in a filling machine or mixer.
  • To make the beehive, you need to knead the dough for atleast 1 hour. The softer the flour is  the easier it is to make roll. Make dough balls of one. Make a modka-like shape and fill it with a puran. Close it tightly, after closing flatten the dough ball by hand and start rolling the dough.
  •  I like small size of honeycombs but If you want you can aslo make big balls of flour and make a large honeycombs.
  • After this Heat the pan on a medium flame, and then add poli on it and then add a lot of ghee on both sides ofd poli  and then  fry till it turns into pinkish gray. These hives ( poli) are quite crispy but make sure you do not spoil it by keeping them outside for 5-6 days.
  • Enjoy the tasty puran poli.

 

 

Thapi vadi


Ingredients:
1 tsp turmeric powder, 1 tsp oil , 1 tsp red chilli powder , Salt as required, 1tsp mustard seeds, 1-1/2 cup gram flour (besan), 1 tsp coriander, 1 cup grated coconut, Water as per need


Process:-
1 First heat the pan.
2- Then add some oil , mustard seeds,  turmeric powder , red chili powder and add water and keep it for boil.
3- Once boiled, then add gram flour (besan)
4- Mix well, no lumps should form.
5- Then put oil on the plate and spread and then put mixture on the plate and spread it. And wait until its cools down.
6- Cut it in square shape and garnish it with coriander and grated coconut.
7- Enjoy the tasty thapi vadi.
