Mendu Vada


Ingredients:-
  1 cup urad dal,  3 /4 green chilies, 1 inch ginger, curry leaves,  coriander leaves, pinch of hing, 1 tablespoon dry coconut, 2 tablespoon rice flour, salt as required, oil for frying.


Process:-
1 -  First take a urad dal in a bowl then wash urad dal with clean water and soak it for at least 3 hours.
2 – After 3 hours drain off all the water from the urad dal and the put in to the mixer jar and grind it in a smooth and fluffy paste by adding water if required.
3 – After grinding transfer all the urad dal paste into a large mixing bowl and beat the batter in a circular motion till the batter turn light and make mendu vada soft and fluffy .
4 – After this add ginger, green chilies ( finely chopped),  few curry leaves, coriander leaves ( finely chopped), dry coconut, hing, rice flour and salt as required and mix it  with spoon well.
5 – After this take a kadhai and add oil into it and heat the oil.
6 –Now wet your hands with some water and take a small sized ball dough and make it round and then slowly sharp the edges  and make  a hole at the centre.
7 – And then slowly put the  mendu vada in oil and deep fry the mendu vada on a medium flame.
8 – And fry mendu vada from both the side till it turn golden brown  and crispy and then slowly remove the mendu vada from kadhai.
10 – Finally mendu vada is ready to serve hot.  You can serve mendu vada with coconut chutney and sambhar .

Vada Pav


Ingredients:-  For aloo mixture – 2 tablespoon oil, ½ teaspoon mustard seeds, curry leaves, 3 to 4 cloves garlic, 1 inch ginger,  2 chilies, coriander leaves, ¼ teaspoon turmeric powder,  3 potatoes ( boiled), salt as required.  
For besan batter:- ¾ cup gram flour ( besan), 1 tablespoon rice flour, ¼ teaspoon turmeric powder, ¼ teaspoon red chili powder, pinch of hing, salt as required, water as required, oil for frying.


Process:-

1 – First take a large kadhai and then add oil into it and heat the oil and then add mustard seeds, pinch of hing and curry leaves and sauté it till it splutter.
2 – Then add 1 inch ginger, garlic cloves, green chilies ( finely chopped), coriander leaves and mix it well.
3 – Then add turmerice powder and mix it again well.
4 – After mixing it then add boiled potatoes and mash them and then add salt as required and mix well.
5 – After mixing it nicely then turn off the flame and keep it aside.
6 – Meanwhile, prepare besan batter  take a large bowl and add gram flour, rice flour, turmeric powder, chili powder, pinch of hing, salt as required and mix it.
7 – Then add water as required and make a smooth batter. Make sure no lump are formed so mix it well.
8 – Then take a large kadhai and add oil into it and heat the oil.
 9 - Now make a ball sized small flat ball of potato mixture. ( you can make round ball if you like).
10 – Now deep the small sized flat ball in  besan batter and deep it in hot oil  and stir it occasionally on a medium flame till it turn golden brown.
11 – Now remove the vada and keep it aside.
12 – Now fry some green chilies carefully and stir it till the blisters appear on chili and then remove the green chilies.
13 – Finally your vada is ready to serve. Serve it with pav, green chutnety, tamarind chutney.
