For dough:- 
2 cup maida, ¼ teaspoon ajwain,  salt as required, oil, ½ cup water.
For stuffing:- 1 tablespoon oil, 1 teaspoon cumin seeds, ½ teaspoon coriander seeds, ½ teaspoon fennel, pinch of hing, 1 inch ginger, 2 chilies, ½ cup peas ( matar), ½ teaspoon chili powder, ½ teaspoon coriander powder, ¼ teaspoon cumin powder, ½ teaspoon amchur powder, ½ teaspoon garam masala, salt as required, coriander leaves.   Water for sealing and oil for deep frying.


1 – First take a  large bowl and add maida, ajwain, salt as required, ¼ cup oil and then mix all this ingredients  nicely then add water and knead it and make a tight dough of it.
2 – After making a dough, grease the dough with oil and keep it for resting for 20 to 25 minutes.
3 – Meanwhile, take a large kadhai and add oil into it and then add cumin seeds, coriander seeds, fennel, hing , ginger( finely chopped), green chili ( finely chopped), peas and sauté it for 3 to 4 minutes.
4 – Then add chili powder, coriander powder, cumin powder, amchur powder, garam masala, and salt as required and mix it well on a low flame.
5 – Now add boiled potatoes and mash them. ( cook potatoes in a pressure cooker for  4 whistles).
6 – Mash the potatoes and mix it with the rest of the spices.
7 – After mixing it nicely then add coriander leaves ( finely chopped) and cover the kadhai with lid for 5 minutes.
8 – After 5 minutes mix it again well and keep it aside till the samosa stuffing gets cool completely.
9 – After 25/30 minutes take the dough and knead it again slightly.
10 – Now take a ball sized dough and then roll the dough into oval shape.
11 – After rolling it in a oval shape then cut it horizontally by dividing into 2 equal portions using a knife.
12 – Now grease it with eater and make a cone  and add prepared samosa stuffing in a cone and then grease little water on edges and close the edges of the samosa.  Repeat the same step to make all the samosas.
13 – Once the samosa is ready now take a large another kadhai and add oil into it and heat the oil.
14 – After heating the oil slowly put samosa in oil and  stir it and then fry it on a low flame till the samosa turns golden brown and crispy and  then remove it.
15 – Finally samosa is ready to serve. Serve samosa with green chutney  and tamarind chutney.

Eggless Omelette

Ingredients:-  ¼ cup gram flour ( besan), 1 tablespoon maida,  water, ¼ teaspoon baking powder, salt as required, 2 tablespoon onion, coriander leaves, 2 green chili, butter, pepper crushed.

1 – First take a larger bowl then add gram flour and maida into it and mix it. ( Make sure no lumps are formed).
2 – Then add water and mix it again and make a smooth batter.
3 – Now add baking powder, salt as required, onion ( finely chopped), green chili ( finely chopped), coriander leaves ( finely chopped) and mix it well  and make a smooth flowing consistency.
4 – After mixing  the batter well  take a pan and heat the pan with butter and spread the butter with brush.
5 – Now pour ladleful of batter into hot pan and tilt and spread the batter and then add crushed pepper.
6 – Now cook it on a medium flame from both sides well.
7 – Finally fold it slowly and eggless omelette is ready to serve. Serve it with tomato sauce or green chutney as you like.
